This position also is responsible for doing on line checks to verify that the production line is running effectively and correctly.
Organizational Relationships Reports to Food Safety and Quality Manager and coordinates with:
Managers, Supervisors, Cheesemakers and all line personnel.
Responsibilities Perform microbiological testing on incoming ingredients, processed ingredients, and finished products.
Testing includes coliform, total plate count, yeast and mold, coli and MRS.

Perform environmental and water microbiological testing.
Testing involves product contact and non-contact surfaces, using sample sponges, air plates, swabs and filtration methods.
Perform analytical testing on products.
Tests include:
Moisture determinations, pH's, Gerber Fat %, sensory evaluations, air space oxygen determination and other functionality tests.
Track accelerated and refrigerated shelf life samples of finished product and maintain a shelf life/ retainer sample inventory.
Make and maintain inventories of plating media, dilution blanks, and other testing media and reagents.
Must train new hires in all aspects of Lab Technician position.
Communicate test results to managers and supervisors, place substandard product on hold and determine final disposition.
Learn and adequately operate all required computer software.
Maintain files and databases on lab related information and organize paper work properly.
Problem solves and investigates consumer complaints when necessary.
Wash dishes and other lab glassware.
Maintains cleanliness of lab area.
Perform hourly retail product evaluations and give immediate feedback to Supervisor.
Perform all duties in accordance with Standard Operating Procedures, HACCP (Hazard Analysis Critical Control Point) Guidelines, Good Manufacturing Practices, safety policies, and company policies.
Assist team in improving quality and efficiency through continual development of the quality assurance techniques.
Assist Quality Coordinator in building a strong team environment.
Perform other responsibilities as necessary to contribute to the company goal of providing our customers with cost-effective, super-premium products and outstanding service.
